About the Chef

Dr. Tim Olenic began his culinary experience at the early age of 14. At the end of a school day, he and his friend Steve would take a bus into Downtown Pittsburgh and work as porters in an exclusive private club and restaurant. Initially they were responsible for moving and setting up the tables, doing dishes and gopher work for the head chef.

In our Seasonal Feature, you will find classic recipes for using fruits and vegetables which are In SEASON. Seasonality is of utmost importance to us. Long before the advent of the transportation industry and the globalization of the planet, people, out of necessity, ate what was available to them. For example, strawberries were consumed in the spring; corn and tomatoes in the summer; and squash in the fall and winter.

For us at ON THE DOCTOR'S TABLE, our seasons will be divided into 4 seasons from a grower's point of view, slightly different months than we typically observe them based on our calendar. Winter occurs from late November to mid February. Spring occurs during late February to mid May. Summer occurs during late May to mid August. And finally, Fall occurs from late August to mid November.
